  • 2 glass beakers
  • hand blender

Ingredients
  

  • 70 g home made oat milk click here for recipe
  • 20 g olive oil preferably cold-pressed, extra virgin
  • 5 g vegetable glycerin hydrates and protects against moisture loss
  • 5 g natural emulsifier e.g., Olivem 1000 or Glyceryl Stearate Citrate

  • Weigh the olive oil and add the chosen emulsifier to it
  • In the second beaker add the glycerin to the oat milk and gently mix
  • Place both beakers (with the oil phase and water phase) in a water bath, meaning in a pot with hot water
  • Heat until the ingredients reach a temperature of about 70°C and the emulsifier is fully dissolved.
  • Blend the mixture with a hand blender on low speed
  • Set the cream aside to cool, stirring gently to maintain a smooth consistency
  • Store in the fridge for up to 10 days
